Blackberry & Bay Ice Cake

Late Summer and earl Autumn evenings have us burning Jardin de la Lune and longing for a return visit to Versailles and the gardens that inspired the fragrance. With notes of blackberry leaf, tuberose, and cade, this scent brings to mind the lush, aromatic gardens of the French palace.

To capture this scent on the plate and to satisfy a craving only ice cream could meet, we made this unfussy, delicious iced blackberry loaf.

You'll Need


Baking parchment
Loaf tin
Peel of 2 lemons
200g / 2 cups of fresh blackberries
3 Bay leaves
710ml / 2 cups of double cream
400ml can of sweet condensed milk
Pinch of sea salt

Make It


Gently cook down 3/4 of your blackberries on the hob, adding a few bay leaves and some lemon peel for added flavor. Set aside once they've turned to liquid.

In a separate large bowl, whisk your double cream until you have stiff peaks, adding a pinch of flaky sea salt towards the end.

Combine your condensed milk with the blackberry mix, stirring well.

Ensuring the blackberry mix has cooled, fold it into your double cream, taking care not to mix entirely, as you want stripes and swirls running throughout.

Line a loaf tin with parchment and add the mixture. Top with your leftover blackberries and additional shavings of lemon peel.

Cover with cling film and freeze overnight. Take out a few minutes before serving, then slice and enjoy.

Jardin De La Lune is a nod to the gardens of Grand Trianon, Versailles. The scent is a luxurious combination of deep tuberose, paired with top notes of blackberry leaf and bergamot and with a base of heady and aromatic cade.
